Saturday: stopped by at Hooters to wish princess Jacinta a very happy 1st birthday. gorgeous day to celebrate! I loved the outside patio and I loved to see all of Jacinta's family & friends gathering to celebrate life, love, & laughter.

wish we stayed longer but had Asher's birthday Luau to attend also.

forgot my camera but here are the pictures in my mind that I will store away:
kuya bernard playing ukelele ... then teaching Pam & Manong Jon some chords on the ukelele.
asher 'little man' walking ...he sure reminds me of ninong virgilio .. i don't know if it's his smile or his gestures.
the pinata.
singing 'happy birthday' to asher. awesome cake (Chiu Quon Bakery on argyle ... sweeet)
lomi lomi and poke... never had it and I've never been in hawaii. but i sure felt transported to the islands.

i gotsta make me some of that ... or check out Mitsuwa or Super H Mart and see if i can buy some ready made.

POKE

INGREDIENTS:

  • 4 cups ahi (yellowfin tuna, sashimi grade) diced
  • 1/2 cup onion, minced
  • 1/4 cup green onion, minced
  • 1 cup soy sauce
  • 2 tablespoons sesame oil
  • Hawaiian salt and pepper to taste

PREPARATION:

This is the most basic recipe for ahi poke, served as a pupu or appetizer at most luaus and Hawaiian dinners.

Season ahi with Hawaiian salt. Add all ingredients, mix well then chill.

Lomi Lomi
INGREDIENTS:

* 8 oz. salted salmon filet
* fresh tomatoes, peeled and diced
* 1 medium Maui onion or any mild onion (substitute 3-4 thinly sliced green onions)

PREPARATION:

This is the most basic recipe for Lomi Lomi Salmon. Additional ingredients can be added based on personal taste.

Wash hands thoroughly. Shred the salmon into small pieces with your hands. Add onions and tomotoes.
Massage this mixture with your hands until all ingredients are broken up and thoroughly mixed. Chill. (You can actually add 6-8 ice cubes and chill.)

If you can only find unsalted salmon, rub the salmon with rock or kosher salt and let stand overnight. Rinse thorougly and soak in cold water for at least one hour, changing the water several times. Also, lox can be substituted for fresh salmon if you cannot locate a salted salmon filet or do not wish to salt your own.
